Flint Dining Room and Bar
The owners of this restaurant moved from Darlinghurst in Sydney in 2008 to take on the Canberra fine-dining market. The result is Flint, in a new top-end development, where they serve beautiful food in rather sleek, if slightly cool, surrounds. On the menu you will find the likes of butterfish cooked with a mosaic of Japanese flavours – bonito, ponzu, seaweed – as well as plump sous-quail, and rabbit and pork belly with hazelnuts. Flint also does fantastic wood-fired pizza, with the pear and gorgonzola a favourite, and keeps prices low enough that you can pop in for something as casual as a pizza and a beer.
