The Chairman and Yip
The Chairman was the most exciting place to eat in Canberra when it opened back in 1994. Locals have since become accustomed to its unique take on Asian fusion cuisine, but it remains popular and is a great place for a modern Asian meal with very smooth service. The Chairman takes its lead from no-one, and creates some excellent combinations, such as tofu and aubergine in a yellow bean sauce, or pork chops with dates, ginseng and honey. The intensely flavoured duck pancakes are a regulars’ favourite, and the beef, scallop and pepper hotpot is a menu mainstay.
