It’s a peculiarity of Canberra that you struggle to find a chair anywhere near the lake. Waters Edge, on the lakefront in front of old Parliament House, is one of the few. Since 2008, it’s been in the sure hands of James Mussillon, perhaps Canberra’s best-known chef. Mussillon’s influences are classical French and this is the basis for his menu. Seafood is highlighted but next to the lobster ravioli with abalone you’ll also find dishes such as rabbit terrine with foie gras or wagyu with gnocchi on the menu. Even the water served here is special, being the rather exclusive Cape Grim Tasmanian rainwater.
