Alphabetically, the last word in Australian craft beer belongs to the Canberra-based Zierholz Premium Brewery. A champion home brewer and soil-andwater boffin, Christophe Zierholz took the plunge to setting up a new microbrewery, focusing on the local kegbeer market. From German heritage, it’s not surprising that Zierholz’s range features a kolschbier, hefeweizen and German ale, supplemented by the odd Belgian- and British-beer style. A restaurant specialising in German cuisine has been a recent development.
