The Ivory Hotel boasts a head chef with an enviable international apprenticeship that includes stints in Paris, with Gordon Ramsay in London and at the exclusive Raffles in Singapore. All this international experience has helped create a truly impressive dining experience at this restaurant overlooking the Tweed Heads River. The menu gives a modern, fresh twist to old favourites such as the signature ‘surf and turf’: braised veal cheek, brick potato and roasted Morton Bay bug tails with pea and ginger foam.
