After spending two years at Sheraton Nusa Dua, owner Klaus Ullrich has been on a personal mission to introduce more Australians to exotic Balinese food. Here he combines the cuisine’s wonderful use of spices with some very native Australian ingredients, such as crocodile. Eat outdoors under tiki torches and enjoy the sweet heat of tropical Cairns with a style of food that is just right for the climate. The classic rijsttafel for two is a standout, comprised of rice with different curries and pickles.
