Expect the unexpected here where Asian and Mediterranean styles are brilliantly blended with extensive and original use of fresh local produce. You would go a long way to find anything tastier than the wok-fried north Queensland mud crab with chilli, tamarind caramel, greens, rice, and hot and sour soup. Or how about crisped brain and marrow of lamb with pressed tongue, mint sauce, walnuts and sheep’s milk cheese? You might recognise the chef here, Nick Holloway. In 2003–04 he was chef presenter on the Lifestyle channel’s House Guests.
