A few kilometres north of town, at Songbirds Rainforest Retreat, this is an exquisite restaurant in a setting that lives up to its lyrical name. Chef Philip Edwards uses organic produce wherever possible, because ‘it is better tasting, better for you, better for the environment’. His very diverse menu features duck, pork, kangaroo and fish cooked in interesting ways. Try kingfish with stir-fried asparagus, smoked eel and shiitake mushrooms, or poached salmon and shellfish in a lime and coconut broth on rice noodles with Asian sprouts and snow peas.
