The best assets of Tasmania’s summery east coast are on show in this restaurant’s beautiful ocean vistas over Diamond Island and Bicheno’s sparkling beaches. The spotlight is on seafood – no surprises there – but there’s poultry and beef too, all allowed to shine amid light and tangy flavours. Start with oysters dressed with zingy chilli and lemongrass or rosé-steamed mussels. Expect mains like duck breast sautéed in nut brown butter with orange polenta, tamarind-glazed trevalla or smoked quail with roasted red onion and marinated cherry tomatoes. But the dish to order here is local crayfish, perfectly grilled and enjoyed with a glass of chilled white wine. Most dishes are gluten-free so coeliac sufferers are especially welcome.
