Happily for lucky diners, the mission of Madge Malloys is to deliver the fish they catch to your plate as quickly and simply as possible. The flavours are as clean and fresh as the sea-green surrounds of the restaurant, and there’s not a battered or crumbed fillet in sight. Instead there are plump, briny oysters, seared tuna tingling with soy vinegar dressing or the succulent white-as-snow flesh of charred flathead. There’s chicken, beef and lamb on the menu too, and a blackboard of daily specials. A wine list focused on Tasmania’s balmy east coast completes the picture.
