Uninterrupted views, fresh Tasmanian produce and the resort’s own home-brewed beers add up to a memorable fine-dining experience in this isolated spot. French-accented seafood features on a menu that changes seasonally, so you can expect Freycinet oysters dressed with raspberry and star anise, or flathead encased in crispy lager batter with lime aioli. Meat dishes include a tasty game pie of rabbit and wallaby in dark, rich stout, or grilled wagyu beef with Madeira jus and pesto asparagus tart.
