Marque IV is a special-occasion venue. The vibe is smart and chic, with a clientele of well-dressed couples and well-heeled business people at white-linen-clad tables in this contemporary dining room, tended by knowledgeable, efficient staff. Huge windows provide a serene outlook across the port. Fine Mediterranean- and European-influenced dishes predominate on a seasonally changing menu that highlights Tasmania’s superb produce. Famous for their excellent twice-cooked duck, you could also expect a blue cheese and honey soufflé, confit leg of white rabbit, or squid-ink risotto with Macquarie Harbour ocean trout. For dessert, the intriguing pistachio gnocchi is a treat not to be missed. There are separate extensive gluten-free and vegetarian menus, and a superb wine list.
