Chef Stuart Prosser brings his passion for the sea to the table with a Mediterranean- and Asian-inspired menu. Sublime dishes include creamy lobster soup with the warmth of cognac, crispy chilli calamari with coriander and green pawpaw salad splashed with lime, and exquisite lemon- and garlic-encrusted roasted blue-eye. Perched above the water in the Sandy Bay regatta pavilion, there are beautiful, uninterrupted views across the Derwent estuary.
