The results of Nick Haddow’s skill are his bold, unique cheeses with names to match. ‘The Bastard’ is a matured mixed milk cheese that packs a punch, and ‘1792’ – the year the French set foot in Tasmania – is matured on Huon pine, imparting pungency and aroma. Taste them all at this Great Bay outlet with a bottle of wine, or coffee and cake. Freshen your palate afterwards with some homemade quince ripple ice-cream.
