Tucked away down a narrow laneway, this is a hidden gem worth unearthing. Owner Tim Baxter has had 20 years in the industry while chef Travis Rodwell has racked up several years at acclaimed Melbourne restaurants including L’Oustal and Circa, the Prince. Together they bring a fresh, sophisticated approach to Bendigo’s dining scene – the pork-loving chef even raising his own pigs for charcuterie, and making his own chorizo sausages, ham and air-dried bresoala. The menu has French, Spanish and Italian flavours with local versions of niçoise salad or veal carpaccio with tuna mayonnaise for entrée. A Lyonnaise salad of confit duck leg or oregano, rosemary and garlic-stuffed lamb saddle, served on semolina gnocchi is among main course options.
