This contemporary dining room is the in-house restaurant for the new Novotel Forest Resort. The name was developed in line with the environmental philosophies of both the resort and executive chef Glenn Krumb, the number 383 representing the radius in kilometres around the resort within which produce for the menu is sourced. This encompasses Daylesford, Ballarat, Smeaton and Meredith, and includes pancetta and prosciutto from Istra Smallgoods in Musk, Tuki Springs lamb, Western Plains pork, venison from Spa Venison in Daylesford and Meredith cheese. Expect dishes such as roasted Tuki Springs lamb rack with braised fennel and ruby grapefruit or slow-cooked Western Plains pork belly.
