This Melbourne restaurant has received some of the industry’s highest accolades. Chef Shannon Bennett’s modern French menu is strictly degustation in the evening, when diners pay upwards of $150 (sometimes a long way upwards). Expect magnificent creations cooked with precision and a characteristic twist: perhaps braised abalone set in a sweetcorn taco shell or roast duck marinated in liquorice served with mandarin foam. To sample Bennett’s master hand without such a hefty price tag, the restaurant does fixed-price à la carte menu lunches, offers informal dining at Bistro Vue and creates gourmet lunch boxes at Cafe Vue (both additional dining venues are on-site). Cafe Vue sibling establishments also exist at 401 St Kilda Road and at the Heidi Museum of Modern Art in Bulleen.
